Ingredients
  • Olive oil
  • Black eyed peas (canned is an option): 1-1/2 pounds
  • Large eggs: 2
  • Salt : 1/2 teaspoon
  • Pepper : 1/2 teaspoon
  • Flour: 1/2 cup
  • Medium onion minced: 1
  • Baking soda : 1/4 teaspoon
  • Baking powder : 1/4 teaspoon
Cooking steps:

After peas are mashed add the rest of the ingredients.

Dust your hands with flour and shape and press into a patty.

In a large heavy skillet. ( I use cast iron) cover just the bottom of the skillet with olive oil.

Add cakes no more than 3-4 at a time. Brown on each side.[/vc_column_text][/vc_column][/vc_row]
