- Olive oil
- Black eyed peas (canned is an option): 1-1/2 pounds
- Large eggs: 2
- Salt : 1/2 teaspoon
- Pepper : 1/2 teaspoon
- Flour: 1/2 cup
- Medium onion minced: 1
- Baking soda : 1/4 teaspoon
- Baking powder : 1/4 teaspoon
After peas are mashed add the rest of the ingredients.
Dust your hands with flour and shape and press into a patty.
In a large heavy skillet. ( I use cast iron) cover just the bottom of the skillet with olive oil.
