Ingredients

• Thawed shelled Edamame: 3 cups
• Extra -Virgin olive oil: 1 tablespoon
• Rice vinegar: 1 tablespoon
• Fresh minced ginger: 2 teaspoons
• Toasted sesame oil: 1 teaspoon
• Sea salt: 1/2 teaspoon
• Vegetable broth: 1/2 cup

Instructions:

1. In a food processor or blender combine all ingredients blend until smooth.

2. Serve with rice crackers, pita chips and fresh veggies.
